Wicked Good Potato Pancakes

Maine Breakfast [caption id="attachment_1038" align="alignleft" width="300"] Image courtesy of Ambro / FreeDigitalPhotos.net[/caption] Blueberries and Potatoes make for a great Maine breakfast. This potato pancake recipe is includes blueberries, low fat yogurt and is a great pre-hike breakfast! What You Need: 4 egg whites 2 medium Maine potatoes 1/2 cup low fat blueberry yogurt 1 tablespoon whole wheat flour cooking oil (optional) Directions: Add mashed, cooked and peeled potatoes into a bowl with egg whites. Mix and add in yogurt and whole wheat floor. Mix thoroughly. Use vegtable or olive oil in a frying pan. Pan fry your potato pancakes until they are golden brown on both sides. Terrific Turkey Salad

It's lean, full of protein and vitamins and provides some amazing health benefits . However, for me, the best part about cooking up a turkey is....left overs! Next time you have some  left over turkey why not whip-up this quick, low calorie turkey salad? What You Need: 5 Ounces of Turkey (white) cut in chunks 3/4 cup unpeeled apple, chopped 1/2 cup of sliced celery 2 tablespoons of raisins 1/3 cup of diet Italian dressing 1 tablespoon brown sugar (or substitute) Lettuce Directions:[mantra-pullquote align="right" textalign="right" width="33%"] [/mantra-pullquote] Stir the turkey, apple, celery and raisins together in a bowl. Waldorf Salad Special

Low Calorie and Healthy [caption id="attachment_759" align="alignleft" width="300"] "Image courtesy of Ambro/ FreeDigitalPhotos.net"[/caption] A Waldorf Salad is a healthy low calorie recipe that's quick and easy to put on the table. A light salad is an excellent snack to provide the energy you need before your next ride or run. What you need: 1 Small Apple (chopped) 1 tablespoon lemon juice 1 small can of pineapple pieces 1 tablespoon raisins (or cut grapes) 1 tablespoon walnuts (optional, crushed) 1 teaspoon of low calorie mayonnaise Leaf lettuce Directions: Mix apple and pineapple together and drain the juice. Add the remaining ingredients (with the exception of the lettuce) and mix. Refrigerate until you're ready to serve. Serve over lettuce. What To Eat Before a Morning Workout?

What should you eat before a morning workout?  You want energy and endurance but you don’t want to feel full or fatigued. Here are some excellent options to give you energy and stamina before working out in the morning. Coffee I’m a bit  of a coffee addict, especially the Green Mountain Pumpkin Spice.  The good news is that a little caffeine can be a good choice prior to your workout. Because caffeine is a stimulant it increases your heart rate which in turn increase blood flow throughout the body. By increasing stamina and reducing fatigue, coffee can be a help for both short, intense workouts or longer endurance sessions.

Powerbars have come along way over the years. Remember those early bars that looked like something from the NASA lunch menu? With so many on the market it can be difficult to make the right choice when selecting an energy bar. Here are my picks for Energy bars to avoid. 1) Zone Perfect Nutrition Bar, All-Natural, Chocolate Mint I was disappointed to discover how much sugar, calories and processed ingredients were in this bar. I love these! Oh well, time to make a better choice.
